Prawn Kalvan

  1. Add all of this stuff to a blender – 1 small bunch of coriander, 2 green chillies, 4 cloves of garlic, 1 piece of ginger (the size of the first digit of your thumb), 1 tsp each of tamarind paste, red chilli powder and turmeric. Blitz for 30 seconds and make a paste.
  2. Add salt, and marinate 250 gm prawns in the paste for 30 min
  3. Heat oil. Add a pinch of asafoetida, 2 slit green chillies and 3 sliced cloves of garlic.
  4. Throw in one chopped onion and cook till golden brown
  5. Add one chopped tomato and cook till soft
  6. Tip in the marinated prawns and cook for 3 min on medium heat
  7. Add 1/4 cup of coconut milk and mix
  8. Turn down the heat and cook on low for 10 min
  9. Garnish with chopped coriander and serve with rice
