- Heat 1 tbsp oil & throw in 1 tsp cumin seeds and let them crackle
- Add one large chopped onion and cook till golden brown
- Add 2 tbsp Ginger Garlic paste and cook with a little bit of water.
- Add 1 tsp turmeric, 1 tsp red chilli (or as much as you like) & 3 tsp of coriander powder. Add a splash of water and cook for 3 min.
- Add 1 tbsp powdered cashew nuts & one chopped tomato and cook the mixture till it looks shiny. You should be able to see oil separating from the masala.
- Add salt + 1 heaped tsp of Garam Masala and mix well
- Add 500 gm of chicken (with bone) and cook on high heat for 2 min. Don’t forget to add salt again for the chicken.
- Turn down the heat and add 2 tbsp of plain yogurt to the pan. Mix well and put a lid on.
- Cook for 30 minutes on medium heat
- Open the pan, check if the chicken is fully cooked
- Garnish with a handful of chopped fresh coriander & serve
