In a blender / whatever you make smoothies in, assemble the following:
- 2 cups of fresh coriander
- 6 cloves of garlic
- 6 green chillies
- juice of 1 lime
- salt
- 1 slice of bread ripped into pieces
- 12 cubes of ice
You can add mint if you like, but classic Bombay style green chutney doesn’t have it in the recipe.
I LOVE this chutney because of the kick it gives every damn thing you eat it with. It goes very very well with kebabs but also makes an absolutely kick-ass sandwich spread.
The bread acts as a binding agent and prevents the chutney from becoming too runny.
The ice prevents the blender blades from heating and helps retain the fresh green colour of the leaves.
