- Heat 1 tbsp mustard oil
- Throw in 1 tsp cumin seeds, a bayleaf and a little piece of mace and let everything crackle.
- Add a chopped onion and cook till brown
- Add 1 tbsp Ginger-Garlic paste and a splash of water. Cook for 2 min on high.
- Chuck in a chopped tomato and cook till it stops looking like a tomato
- Add 1/2 tsp each of turmeric, hot chilli powder and Garam Masala. Add salt, another splash of water and cook till the mixture looks all nice and shiny. Should take about 4 min.
- Toss in 2 potatoes, cut small. Mix well & cook on medium heat for 5 min.
- Add 1 cup of cauliflower florets, cut into little bite sized pieces. Add salt and mix well so the masala coats the veggies nicely
- Sprinkle 1 tbsp of water, turn the heat down to low. Put a lid on the pan and cook for 5 min.
- Open the pan, throw a handful of fresh chopped coriander on top and serve hot
NOTE: Make damn sure you don’t overcook the cauliflower, okay? Nobody likes a squishy cauliflower.
